Roasted Red Pepper Hummus

I just made the yummiest roasted red pepper hummus and wanted to share!

First, I roasted a red pepper in the oven. I cut out the middle, cut it into quarters, then roasted it at 400 degrees until the skin was nice and black.

Once the pepper cooled, I peeled the skin off.

Then I put it in the food processor with a (drained and rinsed) can of chickpeas, a smallish clove of garlic a little bit of olive oil and a bit of sea salt and whizzed it all together until it was creamy. I can't do lemon juice because of my IC, but I'm sure a tablespoon or two would be nice in here as well.

So flavorful! I'm actually excited about my lunch tomorrow for once!!!

that sounds good but red peppers always give me heartburn or indegestion. I am working on adding new food and a bit uneasy about hummus just yet. Any advice? Enjoy your lunch!
