I can't help with the icing - there are icing recipes in the Index but I've never tried any - but here are some recipes to consider:

Ultimate Chocolate Pudding Brownies

Chocolate Chip Cookies

Chocolate Silk Pudding

If you're really mad for chocolate, try making the Chocolate Pudding Brownies (or the Anti-Depressant Brownies), top them with a little soy or rice ice cream (chocolate if you want), and douse liberally with Better Than Hershey's Syrup or the variation I posted. Yum!

Also - don't tell anyone I said so - sometimes the batter to a chocolate cake will seem gooier than the cake itself. Ditto for chocolate chip cookie dough. Just be careful about raw eggs - use pasteurized packaged egg whites or dry egg whites.

HTH.

GOOEY CHOCOLATE - EZ cake and frosting glaze. YUM!!!
Preheat oven 350 degrees
It's the basic "wacky cake" with additions.
1 1/2 c.flour(or I use gluten free flour)
4 Tablespoons DEEP DARK hershey Unsweetened chocolate powder
1 cup sugar (I used 3/4 cup beet sugar)
1 teaspoon Baking powder
1/2 teaspoon salt
1 Tablespoon apple cider vinegar
5 tablespoons canola oil
1 cup water
optional: add 1 tsp. vanilla
Just combine all in a mixing bowl and stir up well to mix.
Pour batter into a round glass pie plate or cake pan.
BAKE at 350 degrees for aprox. 35 min.
NOW COMES THE BEST PART-the frosting glaze---Melt 2-4 Tablespoons margarine in a small pan.(See HINT below for added chocolate)
Add to this 2-3 Tablespoons of the dark powdered, unsweetened chocolate plus 2 Tablespoons sugar or honey. Stir this up real well.
HINT: I also had 1/2 of a chocolate bar at home and added that in with the margarine to melt it altogether.
Then add 4-5 tablespoons of water to make this mixture like a chocolate glaze. With a toothpick poke some tiny holes into the top of the cake. Pour the chocolate glaze over the top and let it seep down into the cake for 15 minutes.
The result is super moist, gooey chocolate happiness.
This tastes even better the next day. I had to freeze half of it since my husband would not stay away from the dish.LOL
I prefer things not too sweet, so if you like really sweet, just add more honey or sugar to the glaze to your taste. Enjoy!
