I also love this mushroom risotto recipe I got off of here it is fantastic. I also do morningstar farms chicken pattys c veggie cheese on it and then a side item either baked ruffles or a rice or pasta. I do leftovers from my dinners I make a lot as well. I also love the baja orange shrimp fajitas in the EFI cookbook it is great for lunches I get many meals out of it, put it in a tortilla with some veggie shreds cheese and a couple of cooked down red bell peppers. I also due grilled chicken breast strips in a tortilla with a slkight of veggie cheese and fat free italian dressing sprinkled on it. Hope this helps!
