I know everyone must be thinking, oh no...not another rice pudding recipe! But this is different from anything else I have ever made and quite tasty.
1/2 cup rice flour 3 cups milk of your choice (I have only used almond so far, but don't see why rice and soy would not work.) 4 TBS sugar (or more depending on how sweet you want it) 1 TBS orange blossom water (I have used 1-2 tsp orange extract and a mix of vanilla, mint, and orange equaling the 1-2 tsp)
Whisk the rice flour, sugar, and milk together in a sauce pan. Heat to boiling, always stirring, or it will clump and scorch! Then turn down heat to low simmer, keep stirring until thickened and ladle into one big dish or individuals. Can be eaten warm or chilled. Serves 6.
This makes for something like a sweet, relatively smooth cream of rice cereal/pudding. I've only had it cold so far and love it. Hope any of you who give it a whirl like it also.
