I use the very large boneless skinless breasts from the meat counter at my grocery. If you use a smaller breast then you don't want to cook for 45 minutes. Also, I can't handle many spices but I do add salt & pepper to taste after it is cooked!

I ended up making two chicken breasts and doubled everything. It just didn't work for us. I am still going to try it again. I have to go shopping though.

Hope it works the next time. Make sure the foil is sealed very tight. That makes the chicken steam instead of bake and seals in the moisture. You might add some hot sauce to the spices you coast the potato with if you can tolerate that. Good luck.
