Apple Oatmeal Muffins

The moistness of these muffins comes from the shredded apple. These make a great breakfast muffin or a nutritious snack.

INGREDIENTS:
2 cups apple, peeled and shredded
1 1/2 cups all-purpose flour
1 cup quick oats
2/3 cup firmly packed brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup soy milk
2 tbsp canola oil
1 tsp vanilla extract
1 cup soy yogurt
2 egg whites

PREPARATION:
Spoon flour into measuring cups and level with a knife. Place flour in a large mixing bowl and add oats, brown sugar, baking powder, baking soda, salt and cinnamon. Stir with a whisk.
Combine milk, oil, vanilla, yogurt and egg whites, stirring until well blended. Add wet ingredients to flour bowl and stir until just moist. Blot shredded apple on kitchen paper to get rid of excess moisture, then add apple to mixture and stir.
Spoon batter into a lined 12-cup muffin tin. Bake at 400 degrees for 20 minutes.

I'm new to these boards, and to the Eating for IBS diet, which I've been experimenting with for the past 3 weeks. I have some oatmeal to use up and was looking for a good apple/oatmeal bread recipe when I found this. If I don't have soy yogurt, is there another acceptable substitute? Thanks for your help!

Well, you could try applesauce. I think I might try these. I just got home from the store with some soy yogurt.

You could just try soy milk. I have used milk in recipes in the past to substitute for sour cream, so it shouldn't be much different for yogurt. Good luck!

These are really good. I made as directed except using eggbeaters instead of egg whites.

I just made these muffins and they are SO YUMMY! I didn't have any soy milk so I just used a little extra soy yogurt and didn't take the extra moisture out of the apples. They came out so great, I highly recommend this recipe!
