French-Toasted Tuna and Hummus Sandwiches

I found this on the Yahoo homepage today and thought, with a few very minor adjustments, this would be a very IBS-safe meal!

French-Toasted Tuna and Hummus Sandwiches

1 can (170 g/6 oz) water-packed solid tuna
175 ml (3/4 cup) prepared hummus
250 ml (1 cup) grated carrots
5 ml (1 tsp) cumin
8 slices [white] bread
125 ml ( 1/2 cup) [soy] milk
4 large egg whites

Press all liquid from tuna. Crumble tuna into a bowl. Add hummus, carrots and cumin, then mix thoroughly. Make 4 sandwiches with bread and tuna mixture.

In a shallow bowl, whisk together milk and egg whites. Dip one side of each sandwich at a time into egg mixture until it is lightly soaked. You should use up all of egg mixture.

Spray a large non-stick skillet (or two medium non-stick skillets) with cooking spray and heat over very low heat. Add sandwiches and cover skillet loosely with a lid or piece of foil.

Cook until undersides of sandwiches are well browned, 8 to 10 minutes. Turn sandwiches over and cook, still covered, until browned on second side, about 8 minutes more.

Makes 4 servings.

I suppose you could make the sandwiches without French-frying them, too!

This does sound really good. I was going to make chicken kabobs for dinner tonight but DH has to work and I don't grill. I think I will do this since I have all the ingredients. Thanks, I'll let you know how it turns out.

Sure! I'd love to know how they are! I was going to make some hummus this weekend and try them myself.

I just finished eating! These are SO GOOD! I LOVED them. I did however use less carrots The hummus is the flavor you taste the most; not the tuna. Thank you again. I'm going to make these alot more.

I really liked this -- a nice alternative for lunch. I just toasted my bread and then put the hummus/tuna on my toated bread! My husband and kids did not particularly like it, but they had never eaten hummus before.
