I would like to share my favorite Ukrainian salad recipe. It's called Oliv'ye. Basically it's a chicken salad or sausage instead of chicken. Since I can't eat any sausage I make it with chicken and it is the best this way anyway.

I don't have exact measurements but this is approximate.

Ingredients:

3 egg whites
2 large potatoes
2 small cucumbers (the kind that's small and very fragrant, usually since pickled)
1 cup of boiled chicken meat (or use white meat low fat sausage instead)
2 small pickles
Canned or frozen peas (don't use if gives you gas)
1 teaspoon lemon
Mayo
Black pepper/salt

Boil potatoes in skin and eggs in the same pan. Take out eggs when they're ready and let potatoes finish boil.
Cut up everything in small equal pieces. Mix all ingredients and can be eaten right away.

Enjoy!

This sounds really good! I think I'm going to have to try it!
