Lemon Chicken with White-Bean Puree

Lemon Chicken with White-Bean Puree
4 servings

2 Tbs. flour
1 1/4 tsp. kosher salt
1 Tbs. lemon pepper
4 boneless, skinless chicken breast halves (I always flatten mine just a bit so they cook more evenly)
1 Tbs. olive oil
2 14.5 oz cans great Northern beans, cannellini beans, or chickpeas, drained
2 cloves garlic, minced
1/4 cup FF chicken broth
1/2 tsp lemon zest

Combine flour, salt, and lemon pepper in a shallow dish; coat chicken with mixture. Cook chicken in oil in a large nonstick skillet over medium-high heat until cooked through, 8-10 minutes; remove from skillet and set aside to keep warm.

Meanwhile, puree beans in a food processor; set aside. Increase heat to high; add garlic and broth to skillet and bring to a boil. Add pureed beans and lemon zest and cook, stirring often, until thickened and heated through, 2 minutes; serve with chicken.

LOL - Yeah, he liked it. He said I should make the sauce part as a dip for chips! He's too funny. I make Easy Hummus a lot and have it with baked tortillas, so I think that's what it reminded him of. Not sure.

This sounds so delicious, ya know I haven't tried any beans since the beginning of this year, But I gonna try this recipe and some beano before. it's to good to past up.mmmm!

I started eating more beans about 2-3 months ago or so. I used Beano too. I still did a little gassy, but nothing major. I only ate small portions at first, then built up to more, and I really did get used to them more like Heather said.

That sure sounds good.but I,m still on the fish,chicken,rice diet.every time I eat any thing else I get all full of air.ofcourse I,m full of hot air all the time any how.ha,ha.

Well, first of all, you don't get it from your doc. It's over the counter. There's a whole string of posts about it in here, so you can read everyone else's input. For me, it did nothing. But then, I only took one pill at a time -- maybe I should have doubled up on it -- at any rate, it's supposed to help if you take it before the meal. I believe it has natural enzymes in it, I don't think it can hurt you. It didn't hurt me, but then too it didn't help either. Bev.

Thank you girls for all the help.as you can see I,m new at ibs an also new at the computer.I haven,t had any insoluble in about 3 or 4 months but I think I,m going to try some.not a lot just a little at a time.an I know you don,t get Beano from the doc.I was going to ask for some thing for the gas.

Mags, this chicken is SOOOOO good -- I like it without the bean puree. My friend in California is a chef, and he gave me his recipe for lemon chicken. (It's INCREDIBLE!) Basically, he marinates the chicken breasts in TONS of olive oil, lemon juice, garlic powder and lemon pepper (like a half bottle!). Then he roasts the chicken in the oven. Not only is the chicken full of fat, but it makes one helluva mess of my oven!

Okay, this is where I'm going with all this: yours is every bit as good as my chef friend's. EVERY BIT! And without all the fat.

Joan - You're welcome for the index & other recipes - but that brown sugar garlic chicken in the crockpot is Kree's. So don't forget to thank her!

BTW: How is that recipe? I've been meaning to try it. Tess posted a recipe almost exactly like it except it's not in the crockpot (which I'd also meant to try FOREVER), but I never knew what to have with it. Any suggestions?

Mags,
If you make the recipe I posted it's somewhat spicy, so something bland and comforting would be good, such as a baked or mashed potato, and then of course a cooked vegie of some sort, such as green beans. Enjoy!

It was great! I did the usual rice and put some of the marinade on the rice which was tasty as well. Hey Mags, it is snowing tons here. Did you get it too? I bet it has been snowing for 24 hours solid now.

Nope - nothing. Yesterday was 62 degrees. And Wednesday's forecast high is 28! Talk about going from one extreme to the other. They're also calling for snow showers - I got my fingers crossed.
