I bought some at Fred Meyer for 99 cents on Saturday! I also heard that there's a Silk Pumpkin Spice drink (posted this on the Diet Board). I'm going to my local HFS this week to see if I can find some.

I LOVE egg nog. I often gaze at the myriad of eggnog products that are in my supermarket. I'll have to go to my HFS to pick up the Silk Nogs. Can't wait!

Shell,
Do you think you could use the new Soy pumpkin spice with your egg nog recipe? I love egg nog but havent drank it in years because of the IBS. So I am excited to know they make an alternative.

I saw this post and went out to get some silk nog. I was so happy to see it (at publix). I wanted to try the pumpkin spice also but they didn't have it. I think I will request that they carry it. I even gave some to my 9yr old son and he loved it. It is so good. I cant wait to make this bread; it sounds wonderful!!

Shell, The eggnog bread sounds wonderful, plan to try it soon. The Pumpkin spice silk as really good also, I found it at Wal-mart and publix. My local health food store also has Vitasoy Peppermint Chocolate. It is wonderful! Especially heated. If anyone has a recipe for anything using this product I would appreciate it.

I had some company well family for dinner last night. I wanted to make your bread but I was out of flour. So I made a varation and they turned out good everyone liked them. 1/3 cup canola oil 1/4 cup of egg whites 2cups of cold Silk egg nog 2 tbs of Rum extract 1 box of vanilla Duncan Hines cake mix
I poured them in snowflake silcone preformed cupcake trays. It worked out in a pinch..LOL

What a great idea!! I'm not sure of the ingrediats in the DH cake mix.... if others try this...that is the only think to be careful of.... some have more dairy then others.

I bought both flavors! yummy! But I was wondering if you can make whipped cream out of it? I'm not sure if it will whip up the same way heavy cream does. Maybe I can mix in some silken tofu for texture? I think the pumpkin spice flavor would make an excellent whipped topping for muffins & cakes!

The egg nog is delish! It's a far cry from what I'm used to but damn this was good. The one thing that would make it perfect for me were if it were thicker. Otherwise, it's Yum-o!

I used one part silk nog, 3 parts canola oil. ***Use in moderation!! - it's mostly oil!*** I recommend topping it with a sprinkle of cinnamon and/or nutmeg. And definitely served completely chilled. I mixed the nog and canola oil with a hand held blender. Beating with a mixer just doesn't do the trick. Anything you have successfully used to make whipping cream with should work.

MAKES 1-2 JARS
Serve it with fresh fruit salads, on Apple Pie, on puddings, fruit tarts or flans, or simply add it to any dessert when you want to make the occasion a little bit special.
Allow 5 minutes to prepare.
EACH 100g PROVIDES
268kcal 4g protein 5g carbohydrate 26g fat 1g fibre
Ingredients
125g/¼lb/½ cup tofu
75ml/5tbsp sunflower oil
100ml/7tbs soya milk
15ml/1tbsp vanilla essence
25ml/1½tbsp maple syrup (optional)
Method
1. Put all the ingredients in a blender and blend to produce a rich, thick cream.
2. Transfer to suitable storage jars and refrigerate till needed.
I found this on a Vegan recipe website (http://www.vegsoc.org/cordonvert/recipes2/leancuisine4.html) and thought it looked interesting. Use it sparingly though because it's pretty high in fat - 26g fat per 100g - though that's a pretty huge serving!
