I have this cake recipe printed out and my notes say I found it on DuncanHines.com but I don't see it there now. The glaze I found on several Websites - it's pretty basic but incredibly lemony.
It may be difficult to find Angel Food Cake Mix without dairy. Supposedly Pillsbury makes it. I use Duncan Hines and I'm not sure whether it contains dairy or not - I forgot to look at the box when I made this the last time. If it does, it's listed as the last ingredient and I do fine with it. Store brands may also not contain dairy.
I got all the lemon zest and lemon juice I needed for both the cake and the glaze from one good-sized lemon.
I make my angel food cakes in two 9-inch loaf pans. They get done in a little less time then the box specifies for an angel food cake pan. To cool, place the pans on a cooling rack and tip them up on their sides. When they're cool you may need to run a knife around the sides of the pan to loosen and then lift out with a pancake turner.
Lemon Angel Food Cake with Lemon Glaze
To make the cake you need: 1 box of Angel Food Cake mix 2 Tablespoons lemon juice 1 teaspoon grated lemon rind (zest)
Make the cake as directed on the box *except*: Replace 2 Tablespoons of the water with the lemon juice. Once the ingredients are blended on low, add the lemon zest before you beat on medium.
Bake and cool the cake as directed on the box.
When the cake is cool, make the glaze and drizzle it over the cake.
To make the glaze, you need: 1 cup confectioner's sugar 2 Tablespoons lemon juice 1 and 1/2 teaspoons grated lemon peel (zest) Pinch of salt
Mix all glaze ingredients together until smooth. Let stand for 10 minutes before drizzling over cake.
Enjoy!

So am I maybe not the only one who buys lemons by the bag now? I LOVE Heather's Lemon-Glazed Sticky Bread, plus there are other recipes I've found, like "Lemon Rice Pilaf" and "Baked Pasta with Lemon Chicken" that are fantastic! We go through lemons very quickly these days!

I found the recipe for Lemon Rice Pilaf - it looks yummy - but I couldn't find the Baked Pasta with Lemon Chicken. Could you point me to that?
