I think so. It should still be yummy. If you find it's not quite ginger-y enough or not quite sweet enough, you could pump up the grated ginger root and/or brown sugar the next time you make it. (The crystallized ginger bits do add a very nice little pop of flavor, though, so if you decide you like the bread consider investing in some.)
When I make this, I find my life is much easier if I add the brown sugar with the wet ingredients instead of with the dry.
I love this bread and I haven't made it in ages - thanks for reminding me!

Thanks Sand and You're Welcome Sand!
After I posted my question, I went to the Ginger People website to restock my Ginger Chews supply and lo and behold, they have crystalized ginger. I ordered a jar (buy 1 get 1 free no less!) and when I get it, I'll add some to the bread recipe so I'll wait to make it til then!

You should go to Trader Joe's in Union Square for the ginger. Their prices are better than other health food stores because they don't use distributors. That's where I get my crystallized ginger. It's in the dried fruit & nuts aisle...
