Letting Bananas Go Ripe

I would love to make the banana bread but it seems that you have to have the bananas super ripe for the bread to come out tasty.

How can I have bananas go ripe without having those little annoying fruit flies flying all over my apartment???

To make things ripen faster you can put them in a brown paper bag(closed). Most fruit you need to add and apple or an avacado to the bag because as they ripen they give off a gas which helps the other fruit to ripen faster. But with bananas you don't need to do this.

Just wait untill they are mostly darken but not going rotten or "melting" which I have happen with bananas. They kind of drip. HTH

I make this with banana baby food. I could never co-ordinate having super-ripe bananas with the energy to make the bread. If I do have a super-ripe banana around when I'm making it, I'll throw that in with the baby food.

Ooooh, now that sounds like a plan! The recipe calls for 3 cups mashed black bananas (6-8 bananas). How many jars of baby food would that make. Thanks!

It may not come out to exactly 3 cups but it's close enough.

I've only used Gerber brand which does have citric and ascorbic acids to keep the bananas from discoloring. That's never bothered me but be sure to check for any other ingredients in whatever brand you use.

Something that I have done a few times as I'm an impatient person. I have made banana bread after buying my banana's the day before.. the secret is.. Freezing them. If you freeze them, then they soften up nicely once thawed.. To thaw them out, run them under some luke warm/cool water in the sink (or let them soak) Makes them much easier for mashing.

Wasn't crazy about the bread made with the baby food. I found it to be too spongy? Sand does this happen to you?

Since the recipe makes 2 loaves, I gave 1 loaf to my Mom and she LOVED it. I thought it was just ok. Mine came out spongy also but a little more on the dense side. Sort of like the Maple Oat Bread. I would make the Banana Bread again for my Mom.
