Does the Cinnamon Zucchini Bread freeze well?

And if so should I slice it first?

It freezes well yes. I usually don't slice it first. I wrap it in plastic wrap and take a bread bag from a recent store-bought loaf and use that to store the baked bread.

I assume a ziplock freezer bag would work as well? Any special way to thaw?

It does freeze well. I use freezer bags and they work great. I found one of those pans that makes about 6-8 small loafs. I just take one loaf out of the freezer and let it sit on the counter to thaw. When I make the larger loaf I did slice it first (used sandwich bags in a larger freezer bag) so I could thaw out a slice or 2 at a time. I haven't made it in a few months but it's on my to-do list today.

I divide the mixture into individual cake/muffin cases before baking. Then I put all the little cakes into a freezer bag and just defrost as many as I want at a time. It makes a good portable snack.
