I tried to make instant banana pudding with soy milk but it didn't set. any idea's on how to make it set? Can I use soy milk in sauces, will it thicken? Thanks for any help.

Hi, did you ever get an answer to your cooking with soy milk question? I would like to know, too.
Thanks, Traveler

Will adding a bit of flour and butter to the soy milk do the trick? I ask because the combination of flour, butter, and milk will usually thicken. This is called a Rue. Of course, you'd have to use flour and butter to the IBS standard. HTH

I answered this on the other forum but for anyone looking for the answer here:
Soy milk will thicken in things with a thickener if cooked but it will not work for instant pudding. Cook and serve pudding mix works very well with soy milk. Anything with flour or cornstarch and cooked will also be fine (not very tasty though IMO). I also use soy creamer in place of cream in some recipes and it stays nice and thick.

"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!
