It's just spices: Salt, celery seed, mustard, red pepper, black pepper, bay leaves, cloves, allspice (pimento), ginger, mace, cardamom, cinnamon, and paprika.

I use it in the water when I boil shrimp. Yum!

I boil for 7 minutes for raw, a little more for frozen. Most recipes will say to boil for less time - like 3-5 minutes - but I like my seafood really, really dead.

I just put on a big pot of water, throw in some Old Bay Seasoning (at least a Tablespoon), bring to a boil, and throw in the shrimp. I'll boil either zip-strip (head gone, shell on but split down the vein and de-veined) or peeled and deveined. I drain them in a colander, run cold water over, then throw some ice on to quick chill. Eat them right away or store in fridge. I love them with lemon and store-bought Heinz cocktail sauce.

I have a very limited seafood repertoire but growing up along the Gulf Coast I was pretty much required by law to know how to boil shrimp.

I haven't gotten around to trying any of them yet but I've seen a few people on the Food Network make fish in packets: fish, vegetables, seasonings, liquid wrapped in little foil packets and backed. They look yummy, easy, and foolproof. I'll post once I've tried some.

OH... you just reminded me...there is one of those packets in Heather's book too... AND we even tried it... that was like 3+ years ago.... I'll have to look it up and make it again... because we really did like it and it was EASY!!
