One more - fajitas:
- the protein would be chicken strips or shrimp or even fish, prepared as you would for fajitas (marinated or rubbed, then grilled or sauteed)
- the veggie can be the cooked stuff you'd put on fajitas (onions, bell peppers, scallions) and/or the cold stuff (lettuce, tomato) along with a little avocado or guacamole (freeze the leftover avocado with lime or lemon juice)
- the starch is a tortilla - if flour is too sticky, try corn

And don't forget the wonder of cold boiled shrimp. They're a great protein, packaged by nature in small portions, and pretty portable as long as you can keep them cold. They go with any kind of cold vegetable and any cracker-type starch.

UUUmm.... Sand, I'm getting hungry!! My dinner is in the oven now!! Cod, and will have green beans and a touch of mash potato IF I have room... will sprinkle my Acacia on my cod and beans since they both are moist...:)

Good call on the flour being sticky... I'll use corn!! I COULD use flour if I put some pam in a skillet and made it into a quesada.

And shrimp.... I love shrimp.

Hi Ulrika,
I noticed you've heard of the paleolithic diet. I recently read about it and started to incorporate some of the ideas into my own diet. I was wondering which cook book you bought and if you find it a good one?

Hi!

The cook book I bought was Swedish so I guess that doesn't help you that much. I find it's quite difficult to get my head around this though. Like you I have tried to incorporate some of the ideas. I got blood sugar fluctuations that were pretty bad so I figured I ate too much white bread and white rice et.c. so I have started to replace some of it with cooked veggies like beets, carrots, squash et.c. Instead of having 2 white bread toasts with applesauce and a banana for breakfast I know eat 1 banana, 1 other fruit, like a peeled nectarine for example, 1 slice of toast with scrambled egg white and a few nuts. And I feel much better!!!

One problem with the paleolithic diet is that some say it should be low fat while some say it should be high fat, some say you should eat raw veggies and some say mostly cooked veggies. Some say lots of fruit and others say more veggies than fruit. I have heard from two people that they got bad bowel problems from following the low fat paleolithic diet so that can be a problem for us since we can't eat that much fat.

I am thinking I will try to replace some of the grain type of food with veggies and eat mainly cooked ones and eat as much fat as I can without going overboard. I am also considering trying a gluten free diet as gluten is one of the worst culprits with grain foods but that shouldn't be too hard. I'll let you know if I come across more good info on the paleolithic diet.

I'm pretty much doing the exact same thing as you. I'm eating squash, mushrooms, carrots, and beets as SF veggies. Banana, berries, nectarines and melons, and apples for fruit. I'm eating more nuts and sticking to the safe meats. I'm also reducing my dependence on wheat products, having more quinoa, some rice and oatmeal instead. I don't eat wheat every day anymore!

There is so many different sources for the paleolithic diet, some even have lists of vegetables to stay away from. I'm just going at it in a logical way, eating more natural foods and lots of veggies. And I'm definitely cooking my veggies, my tum comes first.

If you have any recipes that you try out that are really good, it would be great if you could share them!

I made an absolutely wonderful "Breakfast Scramble" for lunch today. Think it may fit the criteria. It is from the "15 Minute Vegetarian" by Geiskopf-Hadler. As follows: 1TBs olive oil, 2 medium red potatoes, finely diced., 1/2 med onion, finely diced, 2 tsp chili powder, 1 tsp oregano, 1 tsp ground cumin, 12 oz firm tofu crumbled, 1/2 tsp salt, 6 oz baby spinach. Heat oil in heavy bottomed fry pan, saute potatoes, onion and spices for 3 min, stirring freq. Add tofu and salt, stir and then add 1/2 c. water, immed cover pan and cook for5 min. Mound spinach on top cover again and cook about 2 min til it wilts. If too much watery liq in pan, cook uncovered a few min longer. YUM! It also called for 2 tbs pickled jalapeno pepper...my tummy doesn't like them so I left out!
