Ok, this is me thinking, not sure if it would work...

But i think the oil is ok, since its only 1/4 cup. Taking out the wheat germ shouldnt be a problem either just as changing whole wheat to normal flour shouldnt be...

SO if i were you i would just try it like that and see how it comes out. Sometimes the only way of seeing what goes wrong is by making it and looking at the result. That is how i made my recipes for white cake and chocolatecake. Took a lot of tries but in the end it was worth it. Remember that if the first result isnt what you had hoped

Disclaimer: this cake is my own creative thing and so it might not be completely right yet If you notice any mistakes (while translating to english or otherwise) please let me know.

2 cups flour, sifted
1 cup sugar
baking powder (since we have them in other formats, you will have to try how much, i think about one T?)

4 eggwhites
1 cup vanille soy milk
1T vanille
1/3 cup canola oil
1/3 cup appelsauce

Put the oven on 360F (180C) Mix the first 3 ingredients. Mix in another bowl the other ingredients. USe the mixer for the wet ingredients to mix it well. Throw the wet ingredients in with the dry and mix shortly with the mixer. Put mix in a greased cakepan. Put in oven for about 40-60min, till its done.

You might try this recipe for fat free zucchini bread. Personally, I would add 1-2 tbsp of olive or canola oil. You should be able to add some honey and orange peel too. And you can eliminate the cloves and cinnamon if you wish.
