IBS & Diabetic Safe Dessert Suggestions?

I've been assigned the dessert for a small cook-out this weekend. Two of the people that will be there are diabetic and then there's me with IBS.

The only thing I can think of is strawberries & angelfood cake...but we've done lots of strawberries lately.

Does anyone have some suggestions? Thanks!

Nope, sugar-free would equal artificial sweetners - great for the diabetics, but not so much for me with IBS.

And Jello's not fun! I mean, it is, but it's way too easy and I associate it with being ill.

What about substituting other berries for the strawberries... try a mix of blackberries, raspberries, and blueberries over the anglefood cake.

Generally, something fruit-oriented & low fat works well (my Dad is diabetic). Maybe a fruit crisp (just be really light handed with the sugar). Bring along some soy "ice cream" to serve on the side or even do soy ice cream parfaits with fruity sort of toppings included so that the diabetics can have some low glycemic options? I'm sure that safe Brownies would go over very well.

I ended up making an incredibly easy pineapple-angelfood cake I found on allrecipes.com.

It was just an angelfood cake mix and a 20 oz. can of crushed pineapple. Actually, I made it into cupcakes.
It was safe AND yummy!

That sounds perfect (& light, too!). I've made that for my family many times (and they are full of diabetics) and it's gone over well. What most people don't understand is that dessert/treats are totally okay for diabetics (in moderation). They just count it as a "carb" block.
