Sweet Potato Butter
This would probably taste great as a spread on toast or as a dip!
Diet Types: Low Fat, Low Sodium, Sugar Free, Vegan, Vegetarian
Serves: 4
Ingredients:
1 large baked sweet potato (Red Garnet is best)
1 rounded tablespoon almond butter
pinch of salt
Cooking Time: Over one hour
Instructions: Mash ingredients together with a fork until thoroughly mixed.

This does sound interesting! I was just yenning for some apple butter. Once I'm back on my feet - and it cools off again - I'll have to give this a try.

Yep, it's a little too hot to bake right now. I wonder if you can microwave a sweet potato the same way you would a baking potato? Hm, and I wonder if almond butter would mix well with regular mashed potatoes. Or how about adding some almond butter to a pumpkin shake?  I think I have some experimenting to do.
