need help with an on the road dinner

My hubby and I are going to a conference next weekend, and it's always cheaper to bring our own food. I've got breakfast down, and lunches are sandwiches-- can anyone reccomend something that WILL NOT NEED COOKED in any way, that I can stick in the cooler that will actually be fulfilling for dinner?

You can always stick to the typical picnic basket type of foods that can be eaten cold. Chicken, meatloaf, pizza (I prefer it warm but my kids and hubby love it cold). It means doing all the cooking ahead of time but it will be good and safer than any restaurant food. A Subway style sandwich for dinner will certainly make a filling meal. Bon Appetit!

mmmmm cold chicken sounds good right now!
I like turkey ham cold too. Either on it's own or as a sandwich. You might be able to make an IBS safe potato salad as a side dish to go with it. Or a pasta salad maybe.

It would have to be "turkeyloaf" and cheeseless pizza in order to "be safe".
