Lemon/honey rice flour muffins

I've been addicted to these muffins lately. They are fairly sticky.
1 cup rice flour 1/4 cup lemon juice 1/4 cup water 2 tablespoons canola oil 2 tablespoons honey 2 teaspoons baking powder 1/2 teaspoon salt
Mix, put in a 6 cupcake muffin pan (use paper muffin cups since they are sticky) and bake for 20 minutes at 425 F
Rice and honey don't give me any gas or bad BM's - unlike a muffin made from wheat flour and white sugar. You can add in nuts or rolled oats, depending on what you can tolerate.

I haven't tried it with bleached wheat flour.
If you try it, maybe add an egg. The egg adds structure to the wheat flour. It keeps the muffins from falling apart.
I haven't been eating eggs, so I use honey instead of white sugar. The honey is sticky and keeps things together. Also, honey is easier to digest than say white sugar or corn syrup. At least, it seems like it to my tummy.
The nice thing is that you can make this in 30 minutes really. Yummy muffins for a sunday brunch with friends or family

I will have to give this one a try since I can't eat wheat. It's hard to find wheat free stuff that isn't fussy to make. Anything sweet right now makes me happy!

Why can't you eat wheat? Did you test positive for antibodies?
What symptoms does a wheat free diet help with.
This recipe does sound really easy!
