Anyone have any good strawberry recipes???

Hi all, I haven't posted in quite sometime now. But, I've recently been on a strawberry kick and for some reason they were on sale at the grocery store this week. SO, I bought a ton But, now I don't know what to do with them. Does anyone have any quick and easy recipes I can incorporate them in??? I'd greatly appreciate anything you can think of. Thanks!!!

I spend a lot of time on flickr, and I recently came across this: Strawberry-Lime Cupcakes.

I would NOT use the recipe that the photo links to, because it's not IBS-safe, but you could easily substitute your favorite safe muffin or cupcake recipe, put the strawberry in it, and drizzle a simple icing made from lime juice and confectioners' sugar over top. That's basically what that is anyway.

This is a recipe that Kree adapted. I put the mix in a cake pan (I used a 9x14 and it came out kinda thin so you should probably use a smaller pan, maybe even a brownie pan, or double the batter), I left out entirely the buttermilk, and I doubled the strawberries. Note that I can tolerate a lot of strawberries for some reason. I've been eating them since before I could stand and I stubbornly refused to give them up.

Muffins
3/4 cup all-purpose flour

1/4 cup egg substitute (or 2 egg whites)

1/4 cup canola oil
1 cup fresh strawberries, chopped

Topping
1 teaspoon cinnamon
3 tablespoons sugar

Preheat oven to 375 degrees.
Spray muffin tin with cooking spray.
Mix together flour, sugar, baking powder, backing soda and salt.
In a separate bowl beat together eggs substitute, almond extract, soy buttermilk and canola oil.
Add wet ingredients to dry ingredients and mix until dry ingredients are just moistened.
Gently fold in the strawberries.
Fill prepared muffin tins about 2/3 full.
Top with cinnamon/sugar mixture.
Bake 15 minutes or until tester comes out clean.

I didn't have any lemon juice handy so I just left it out.

I am going to make this in a few days I can't have any soy or rice milk is it ok to leave out and the lemon?. I can't wait to try this and i want it to turn out! Any suggestions would be appericated thanks!

I left out the lemon in mine and it came out okay. Can you sub almond milk? I suspect it won't come out quite right w/o some sort of milk in there.
