Hello...anyone interested in a Thai Tofu Curry recipe? It is really tastey. It is about the only way I like tofu! Very low-fat.

Thanks Lisa...I am kind of new here so I am not sure how it works. This recipe looks like a lot of ingred's, but it is very easy!
THAI TOFU CURRY
1 7oz pkg. firm tofu, cubed 1 Tbl. soy sauce 1 Tbl. canola oil Marinate the tofu in the soy sauce for 15 minutes. In the meantime, put the following ingred's in a food processor or blender, blend for about 10 seconds or so:
4 green onions, chopped 2 Tbl. canned, diced green chilis 2 dash garlic powder (you can use more...hurts my tummy) 3 dash ginger, dried 2 tsp. cumin 1/2 tsp. coriander 1 Tbl. soy sauce 1 1/2 Tbl. lime juice 1 tsp sugar 1/2 tsp. red pepper 1/2 tsp. salt 1/4 c. soymilk, plain
In a nonstick pan, brown the tofu in 1 Tbl. canola oil until firm and sort of brown. Add the blender mixture and cook 20 minutes (covered) on low, stirring occasionally. Serve over basmati rice.

Thank you so much!! I love Thai and curry and would not have thought this to be a safe dish. Definitely going to try this over the long weekend when I can finally find some time to experiment with cooking. You're a sweetheart!
