Hardly Even A Recipe BBQ Chicken

This is ridiculously simple but I've made it a few times now and it always turns out delicious and juicy so I thought I'd pass it along.

Put boneless skinless chicken breasts in a ziplock plastic bag or dish you can marinate in.

Add enough barbecue sauce to get the chicken well covered with it.

Let chicken marinate in the refrigerator for at least an hour, more is better. Turn occasionally if you remember.

Spray a rack with Pam and place it in a shallow oven-proof dish. I use one of my Corning Ware casseroles.

Place the chicken breasts on the rack and slop the barbecue sauce you've been marinating them in over the top.

Bake chicken in a hot oven (I've used from 350 to 425 degrees depending on what I'm cooking with it) for about 35-45 minutes.

There's no need to baste with more barbecue sauce but if you decide to do so, be sure to baste with fresh barbecue sauce NOT the sauce you've been marinating in.

I've used store-bought barbecue sauce and the barbecue sauce from Heather's Sweet Smoky Barbecue Sauce from her EFI cookbook and both work great.

This is great with Crispy Potato Wedges or Baked Lyonnaise 'Tatoes.

My brother makes a very simple, very yummy BBQ chicken:

Sprinkle chicken breasts with Emeril's Original Essence and let sit for 30 minutes. My brother lets them sit out on the counter and so does my husband if he thinks I won't notice. I prefer to always keep raw poultry in the fridge.

When ready to grill, brush with BBQ sauce (I really like Sweet Baby Ray's but Kraft is fine) and grill until done, turning and brushing with more sauce.

Delicious.
