Fresh Strawberry Muffins

Fresh Strawberry Muffins
(Makes 12 muffins)
These muffins are a great way to get some insoluble fiber if you can tolerate the whole wheat flour! They're also tremendously tasty. The whole wheat flour and almond extract give them a unique and wonderful flavor.
Muffins
3/4 cup all-purpose flour
3/4 cup whole wheat pastry flour (if you can tolerate it, otherwise use all white)
1/2 cup sugar
1 tablespoon baking powder (yes, a full Tbsp!)
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup egg substitute (or 2 egg whites)
1/2 teaspoon almond extract
3/4 cup soy buttermilk (add about 1/2 Tbsp lemon juice to measuring cup, then fill to 3/4 cup with soy milk and allow to sit 10 minutes)
1/4 cup canola oil
1 cup fresh strawberries, chopped
Topping
1 teaspoon cinnamon
3 tablespoons sugar
Preheat oven to 375 degrees.
Spray muffin tin with cooking spray.
Mix together flour, sugar, baking powder, backing soda and salt.
In a separate bowl beat together eggs substitute, almond extract, soy buttermilk and canola oil.
Add wet ingredients to dry ingredients and mix until dry ingredients are just moistened.
Gently fold in the strawberries.
Fill prepared muffin tins about 2/3 full.
Top with cinnamon/sugar mixture.
Bake 15 minutes or until tester comes out clean.

Do you have to use the whole wheat flour possible sub. a soy flour? Never used it before so new to cooking for IBS...

These sound fabulous.
I can't tolerate any whole wheat so I'll be using all white. Do I need to use white pastry flour or can I just use more white all-purpose flour?
What is pastry flour, anyhow?

Sand, I would just use more all-purpose flour. I just used regular whole wheat flour. I'm not exactly sure how pastry flour is different!

Honestly, I've never used soy flour either. I've heard you should only sub it for up to 1/3 of wheat flours, though, because it has different properties. Because of that, I wouldn't use it to replace the full 3/4 cup. I might use 1 cup all-purpose flour and 1/2 cup soy flour. According to what I've read that should work out for you!

I made these this morning. Rice milk instead of soy milk. I did not top them with the sugar and cinnamon. Cinnamon just didn't sound good with strawberries, although after I made these I found another similar recipe on the Boards that also calls for cinnamon, so maybe I'll try the topping next time. However, these are delicous even with no topping. They're good hot out of the oven and cooled. And they're very light.
The next time I make them, I think I'll cut back on the almond extract a little so I can taste the strawberries more.

I never thought of cinnamon on strawberries until I had mixed fruit at a greek restaurant that sprinkles cinnamon on the fruit. It's really very good!! This recipe looks great. I must try it!!

Just a tip for people wary of the whole wheat flour: What about substituting brown rice flour for the whole wheat flour, it still gives you some insoluble fiber but is a whole grain that is more tolerable to IBS? Bob's Red mill makes brown rice flour that I use.
Can't wait to try these! They sound wonderful!

I made these with frozen strawberries this morning. (Still cleaning out that freezer, Melissa!) They were very good although they definitely lacked structural integrity - they tended to lose their bottoms when I took them out of the pan. Still, it's nice to know they taste yummy with frozen strawberries.
I've been wondering about trying other fruits (fresh or frozen) and an extract other than almond. Maybe I'll cruise the extract aisle the next time I'm in the grocery store and see what looks good. (Blueberry with lemon? Blackberry with ?)

YUMMMMMM! I had to guard them with a wooden spoon from the starving hoards of little boys that always invade my home on baking day. If I'm lucky, I might be able to save one for when hubby comes home from work. My only complaint? The recipe only made just over a dozen The only changes I made were using vanilla extract and strawberry flavoring instead of almond and omitted the cinnamon topping.

Did you thaw the frozen strawberries first, or just chop them up and add them frozen? I'd like to try this with frozen strawberries, too.

I took them out and chopped them up then they sat there while I put the muffins together. I'd say they were about half thawed when they went into the muffins.

I just used soy milk rather that soy buttermilk and I poured the whole thing into a cake pan and baked it for about 20 minutes. VERY tasty. Thanks for the recipe!

I made these substituting 1/2 teaspoon of rum extract for the almond extract and 1 cup of finely chopped fresh pineapple for the strawberries. They were excellent!

My first IBS cooking from recipe and these were great! I used almond milk instead of soy (soy milk is not good for my IBS), vanilla, and egg whites. Great! Thanks for posting it!

I haven't made these in ages but I bought a lot of strawberries on sale and remembered this recipe. Still delicious and a great thing to remember as summer fruit becomes available.
Next I'm going to make this chicken teriyaki (something else I haven't made in a while) and use the leftover pineapple to make pineapple rum muffins (something else I haven't made in a long time). Yum!
