Veggie Bread

I recently ate at a restaurant that served veggie bread. It was yummy - basically a nice white bread with little bits of vegetables in it: celery, onion, parsley, and carrots. I went looking around for a recipe and found this very useful web page. Sadly, their basic bread recipes call for dairy, but it sounds like I can use any IBS-safe basic bread recipe (machine or not) and throw in about a cup of vegetables (or fruit or olives or any of the other combinations mentioned in the site (except the cheese, of course)).
My oven is out of commission right now but once I start trying these I'll post how they come out. It seems like a great way to get more IF in while making sure it's wrapped in SF - literally.

Wow that sounds really good, and interesting. I'll have to try that. Please tell us how it comes out Sounds almost like it could be a small meal on its own,,, or at least a really good snack. Saltines can get kinda old when you eat them every day all day long LOL.

I love zucchini bread, too, but the idea of these breads intrigues me because they're not sweet breads like the zucchini bread I'm used to. Instead they're just basically white bread with veggies. Darned oven!
