Best lemon cookies EVER!! LOL

Ok, I'm not sure about the fat content, but if you eat these moderately, they shouldn't give any problems. I haven't had any at least. The cookies are kinda small too, so a couple a meal or whatever should be fine.

Fluffy Lemon Cookies

1 box lemon cake mix (I use Betty Crocker, but I'm still not quite sure what ingredients to look for, so maybe this might not be the best?)
1 tup Cool Whip (there is dairy free and fat free)
1 egg ( I use 1/4 cup Egg Beaters)
2 cups powdered sugar

Mix cake mix, cool whip, and egg together until a sticky batter forms. Form small balls and roll around in powdered sugar. This is very messy!! Place on cookie sheet and bake at 350 for 12 minutes or until LIGHT brown. They are going to feel like they aren't ready, but they get more firm as they cool off. It will take some time to learn exactly how they should look, but after a couple batches you'll get the hang of it. Also, this sounds like it won't make alot, but this one batch makes 5 dozen cookies! The cookies will also spread out as they bake, so make sure to form SMALL balls. One more thing, you don't have to use lemon, you can use any flavor. ENJOY

A lot of box cake mixes do contain trace amounts of dairy - as the last listed ingredient, for example - although store brands often don't. My own experience has been that the very small amounts in brands like Duncan Hines don't bother me but everyone's different.

I also do fine with Cool Whip Light even though it says it has a form of casein in it. Again, the amount seems to be too small to bother me.

So I think I can try these. I do love lemon cookies but I'm also wondering how they'd be with spice cake mix. Yum!

Duncan Hines mixes and dairy new

Several Duncan Hines cake mixes used to be vegan, but then they began including milk in everything -- apparently there was such a huge response that they took it out again. I just bought several cake mixes tonight and the ones that Wal-Mart had that were dairy-free were:

- Lemon Supreme
- Devil's food
- Dark chocolate fudge
- Yellow
- Fudge marble
- Red velvet
- Spice
- Butter recipe golden (which doesn't actually contain butter)

(Note -- I didn't actually buy all of these. Really.)

I think that this lemon cookie recipe or something similar to it is already in the recipe archives -- it's a good reminder, I really should try these one of these days. They sound yummy. Although I think probably I have a moral obligation to try it with chocolate cake mix to make sure it would taste acceptable.

Duncan Hines has gone back to dairy free? That's great. I just stopped even looking at the ingredients. Yay for our side!

I'm not sure that's a fair test of the recipe. It's pretty hard to imagine something *not* tasting good with chocolate.
