Mango curry chicken wraps

I must say I am quite pleased with myself...I threw these together tonight and they were absolutley fabulous..Thought I would take the leap and share them with you all..since so many of your recipes have helped me gain some joy from eating again.
Mango Curry Chicken Wraps
1 Chicken breast cut up into very small peices
medium size spoonful of low fat mayo (or soy mayo)
Curry Powder (to personal taste)
mango- cut very small (amount is up to the individual..I put in a lot of it)
red onion- cut very small
2 small flour tortillas
All I did was throw together all of the ingrediants in a bowl and stir it around, making sure to keep the mango chunks whole. I microwaved the tortillas so that they were soft, placed a pile of the chicken mix on one side and rolled it up.
It was fast, easy and really, really tastey. I had them with a tiny bit of steamed spinach and a little bit of squash..random combination I know

Sounds yummy. And I bet if I was feeling particularly lazy I could use canned chicken.

absolutley...I had never thought of using the canned chicken...excellent idea...and about 5 mins less work..that's my kind of food

I can eat it, I usually use swanson brand (but only because I can't find anything else in my grocery store... other brands might be cheaper). You just need to watch the ingredients and make sure it's CHICKEN BREAST ONLY (the other kind is cheaper, but higher in fat)
Also, if you're watching your sodium intake, it does have a lot of sodium...
