What is a substitute for half-and-half. I'm trying to make a she crab soup.

Half and half is very high in fat and any substitute that is as high in fat will be dangerous(read: a trigger).
You can try substituting soy milk... I am sorry I can't help you there, I hate crabs. But if the soup depends on the high fat content of the half and half, it will probably not turn out right.
Some things just don't have substitutes, unfortunately. It's difficult to come to terms with that.

Is there a way to use something thicker than soy milk? Or maybe make the soy milk more creamy? The soup is alot like a clam chowder. I think why half and half is used is just to make the soup thick.

Hmmm... maybe tofu? Processed I mean...
I don't know, really, that's not my realm. I have just seen tofu used as a thickener in recipes here...

What you might try is whisking some cornstarch into the soy milk before you add it. There is a Silk brand coffee creamer that is thicker, but it might be too high in fat to use in a soup. I have used it in recipes that call for only a splash of cream, not a whole lot.

Doesn't that contain cassein (a milk derivative)?

I haven't used it in a while, so I don't have a container in the fridge to look. I don't think it has cassein in it, as my son, who is allergic to dairy, has never reacted to it. If it does have it, it's in small enough amount to not cause an allergic reaction in him.

I will try the cornstarch. I have thought about the non-dairy creamer but as it is so high in fat I decided against it. Thanks for your suggestion.

I am glad your son does not respond to it. I think it contains sodium casseinate. I am not sure too, though... I was looking to use it and for some reason I didn't even buy it to try... I sort of remember it was the cassein.
Anyway, I will check and post whether it contains it.
