You can use Marshmallow fluff and leave the canola oil out. It's takes a little more "elbow grease" to mix everything thoroughly but it will come out just fine.

Hmmm... Can you use vegetable oil? Smart Balance might work. I've never tried it. But it should melt when you heat the marshmallows and mix in. I'm sorry your RKTs didn't come out right. I've made them that way before and they came out alright.

Btw, you can try sunflower oil, instead of canola...

I usually stick mine in the freezer for about 10 or 15 minutes after I make them and they hold together better. I keep them in the fridge after the initial chill in the freezer.

I'm a little late on this (I'm sure you've made them already) but I use Smart Balance all the time. I make Rice Krispie Bars at least every other week. I use the Light Smart Balance
9 Cups Rice Krispies 6 cups minature marshmellows 3 Tbs Light Smart Balance (5 grams fat per Tbs)
Put marshmellows & SB in a Double Boiler & melt, pour over Rice Krispies. Use a 9 x 13 pan this way you get bigger thicker bars. I use Butter Flavored Pam or similar to spray pan & also use on hands to push mixture into pan. SB has alot of water in it but it still works good for RKT. The Marshmellows & krispies are doubled from the original Recipe & I use very little SB, you could use more but you'll also be adding fat if you do.
