Red Pepper Soup new

I finally found the recipe but discovered it wasn't cream that was the bad guy but BUTTER! Nevertheless, here it is:

RED PEPPER SOUP:
6 sweet red peppers (never green peppers)
1/2 cup butter or margarine
2 medium onions
4 teaspoons curry
5 cups (or more) chicken stock

ROAST red peppers at 450-degrees until charred BLACK (20 mins. or so). Transfer to rack and LET COOL. Pull out insides and stems. Should peel easily. Melt butter in pan. Add onions and saute. Throw in peppers (whole or pieces); saute 5 minutes. Add curry. Cook on low 5 minutes. Add stock and simmer, covered, for 10 minutes. Puree.

Note: this is incredible soup. We need a substitute for the butter, obviously! Heather? Shanna? Mags? HELP!

If I was making it, I'd probably try 2 T of olive oil or Soy Garden to replace the butter.

Make that 'WHEN' I make it...I'm printing it right now. This recipe sounds great!

Great idea, Mags. Yeah, it is good soup. Expensive, though, unless you make it when peppers are in season. And, by the way, if you like soup, check out the Lentil Soup With Sausage that I posted here a few days ago. That's really incredible! Everyone I've given it to has asked for the recipe. And, even though it has tomatoes in it, it doesn't bother my tummy (I think because there aren't that many tomatoes).

Speaking of Soy Gardens, I can't find it -- of course -- so it's going on my list for the health food store tomorrow. I tried "Veggie Butter," but YUK!

Oh, and when you put the food processor on your wedding list, be sure to specify Cuisinart. I have TWO! They're fantastic. Go for the bigger bowl! And when's the wedding?

I plan on trying the lentil soup too - I bought some lentils awhile ago, and haven't figured out what to do with them! LOL I wanted to make Heather's dip, but after I bought them, I found out red lentils & lentils were 2 different things, so these lentils have been hanging out for awhile. I plan on trying them in the soup eventually.

Every time I've seen Soy Garden at a grocery store, it's always been with the fruits & veggies where they have the soy cheeses. Don't know if that would help you or not.

Thanks for the tip on the food processor. I've been trying to figure out which one to get - there's so many it's so overwhelming! I've never used one before either, so that makes it worse. I was looking at some on epinions.com. My mini-prep is by Cuisinart, and I also have their handheld blender. And their ice cream maker! I've been very happy with their products so far. The big day is 10/8/04. Can't wait! 299 days to go!

I love Amy's soups too! I really love the Split Pea and I eat it with a few slices of sourdough. I will have to look for the soy pizza as well.

I have found I can eat at Pizza Hut!! I order the chicken veggie lovers pizza, with the veggie cheese on either the thin crust, or hand tossed and it is really good and does not bother the tummy at all. I feel like I am cheating, but I'm NOT!! Makes me happy. I can order it delivered on a Friday nite when my husband is doing his bowling league with the guys thing, and I get a chick flick for me and a pizza, and life is truly good....:)

Whaaat??? Pizza Hut serves veggie cheese pizza? WHAAAT? No dairy? I can't believe it.

I have SOOO got to call them. I've been overdosing on Amy's frozen soy cheese pizza, but this is just too good to be true.....

Don't get your hopes up too much, Bev. Not all Pizza Huts have veggie cheese. I got soooo excited after reading a post about this, and it turns out none of the Pizza Huts in my area have it. Sigh. But I hope it's different where you are!!

WELL, that is just not fair, that not all of the Pizza Huts have this pizza. I did not know that. I am so sorry for suggesting it..........:(

No, don't be sorry! For those people who can get it that's an awesome thing, and they should definitely know about it. I'm going to try calling some Pizza Huts a little farther from home, and maybe they'll have it. I miss their pizza so much!
