Has anyone make the cantonese jok(rice porridge soup)? I am trying to make it now but dont know how long to simmer it. It is out of Heather's Eating for IBS book, and the recipe says reduce heat to bare simmer and simmer until it is the consistency of porridge. How long does this take, and what is the consistency of porridge? like oatmeal? or more liquidy like soup? Help!

I found I had to play around with making rice soup. People tend to like different consistencies, but if you make it too thick it's easy to add some water. If it's too runny just keep simmering a little longer.
I can't remember Heather's recipe, but when I make rice soup I usually put about 1 cup rice, 5 cups water and simmer for 1.5-2 hours. It's best to make it the first few times when you have time to check on it. Then once you find the perfect timing/amount you can just leave it.

thanks again K2. I searched cantonese jok on the site and found another recipe with less water. Heathers calls for 12 cups and it took about 2 hours to get thick enough. But it also gets thicker when it cools so i did just add water when i reheated it. I like it very much and have tons leftover. I hope it freezes well.
