I'm pretty sure in other recipes I have subbed two whites for one full egg, so I'm thinking 3 whites total. Hopefully someone more experienced can confirm.

I agree with Jen - 1 egg white is 1/2 an egg. So 2 whites would be 1 egg.

I can't find the sugar cookie recipe you're referring to and I'm not sure how big a package of EggBeaters is, but here are the equivalents:
1 egg is equal to: 2 egg whites 1/4 cup of EggBeaters 1/4 cup of pre-packaged liquid egg whites
1 egg white is equal to: 1/8 cup of pre-packaged liquid egg whites
So, yes, for the Junior Mint Brownies you're talking 3 egg whites to equal 1 large egg and 1 egg white.
If you can give me the link to the Sugar Cookies recipe or tell me who posted it and the exact name of it, I'll see if I can find it and figure out what the equivalents are.

Here is the link to the sugar cookies web page
Quote:
1 package egg beaters¨ 99% egg substitute -- (4 oz)
4oz = 1/2 cup eggbeaters (equivalent of 2 whole eggs or 4 egg whites)
