Subbing for butter?

In another IBS book I read (which didn't advocate getting rid of dairy, but was all for reducing the fat) the author said that she had replaced butter with cream cheese in some recipes. Has anyone tried this with soy cream cheese? I have a few cookie recipes that I know don't turn out with a margarine, but before giving up, I thought maybe I'd try cream cheese. Thoughts or experiences?

Earth Balance Buttery Spread. It's a vegan butter sub that comes whipped and, well, not whipped (whatever the word for that is). I use it for all my baking/cooking/butter purposes and it works very well. Tastes good too.

because soy cream cheese is pretty runny. I'm not sure how well it would hold up in baking -- your cookies might end up as doorstops. It's also still pretty much pure fat, so you'd still have to be careful about how much you used.

If you do try it, though, let us know how it turns out.

So you can make, say, chocolate chip cookies with that? I will have to see what I can find. I saw soy subs for sour cream and cream cheese at the store, but not for butter. This is NOT the heart of the vegan foods movement!

While we're on the topic, can you use a non-dairy butter such as Smart Balance Light in place of oil in a baking recipe? Or would it be better to use part canola oil and part applesauce? I mostly use olive oil for regular cooking or Pam b/c the SB light doesn't really melt too well but has anyone tried it in a baking mix?

If you can find it...you can make anything with it. I've used it for cookie, cake, pie, sauce, etc. I've ever made and it comes out just find. You'll find that a lot of butter subs taste kinda nasty. But many of them are very good. So you have to keep trying them until you find something you like. I don't know which stores you have around you but it's in every major grocery store out here and most of the specialty stores. You can always try to find a health food store that will order it for you if you can't find it locally.

I've only bought it a couple times, but it definitely wasn't firm. If your experience is different then maybe I'd better not buy any more refrigerated products from that grocery store.

Yeah, I've definitely never had any Tofutti cream cheese that was runny. It's not as firm as the blocks of real Phili cream cheese. It's like the spreadable cream cheeses, but certainly not runny. I have found other brands of tofu/soy cream cheeses that were pretty nasty, though.

I'll have to see what I can find -- we've only got one HFS, and the grocery stores are hit and miss on many things. But I will look for the Earth Balance.
