This is for the Pumpkin Apple Spice Bread in Heather's EFI Cookbook. The original calls for 3/4 cup canola oil.

The pumpkin bread came out wonderfully! It was really simple to make (I used only a tiny bit of oil, mostly applesauce), and was a big hit at the dinner! I had several requests for the recipe. They were shocked to hear that it's quite low in fat. I made it with walnuts, btw, which some people may not be able to take, but they added a lot to the flavor and texture. Yum! Happy Thanksgiving, all.

I know Thanksgiving is past, but I just wanted to give a big thumbs up to the double decker sweet potato pecan pie from Heather's book. The whole family loved it!
