My husband has vetoed the Tofurkey option (I think he's just scared of it), so I'd like to make something yummy to "replace" it, that he'll also enjoy! Do a search online re: stuffed pumpkin recipes. Stuffed squash can be elegant, too. Also, there are some really great pumpkin soup and pumpkin chili and pumpkin curry recipes out there as well.
