Don't forget about veggies like sweet potatoes and butternut squash. Try MCV's Twice Baked Sweet Potatoes for a wonderful soluble fiber veggie dish. If you're IBS-D, you should also eat IF vegetables for health and if you're IBS-C you must get some IF vegetables to keep things moving. The only way to know which ones you can handle is to try them. Do so cautiously: make sure you have a soluble fiber base and chop, puree, cook - whatever it takes to make them okay for you - and try just a little bit at first. Some IF vegetables may be more troublesome than others. You can read this to learn about them and maybe try some of the simpler ones first.
