Pumpkin Muffins - Gummy inside?

Hi, I made the pumpkin muffins with the candied ginger in them and they are gummy inside? Does anyone else have this problem and what did I do wrong? Thanks -Debbie ibs-C

is just the ginger gummy or the dough itself? If the dough...my guess is they are under cooked... I'm sure they are safe to eat.... but yes, the candied ginger is kinda gummy chewy, like gummie worms or bears after they get warm in your mouth.

Hi, It was actually the dough - they were cooked and they were nice taking them out of the oven and then they collapsed - whoops, I am wondering if I forgot Baking powder or baking soda?
