I'm just afraid the veggies will burn and not cook appropriately. I thought Wind must have made this soup using a different cooking method that she didn't post?

I really like to stick to original recipes without too many alterations. I don't trust my cooking abilities!

Maybe I'll look through some other soup recipes to see how much oil they use. I would like to use some oil. Maybe 1 T is a safe amount.

I think I'll use 1/2 T or less.

I think if you just cooked them in water, that would be fine. You won't have the onion anyway, and it's the only think I'd think would be different sauteed rather than boiled.

I generally don't put oil in my soups. I just "saute" the onions/carrots/celery (usually one of these, not all of them at once) in a little cooking spray and water. They take longer to cook, than they would if you were sauteeing them in oil, but they bother my stomach far less.

If you don't want to use oil, just spray the pan with some fat-free cooking spray first! I sometimes do that.

Thanks Lisa Marie! Do you use all the oil? I ended up using half the amount.

Can I ask what you usually eat along with this for lunch? I'm not sure if the squash is enough SF either. Can't wait to try it! I pureed the whole batch and only used 1/3 cup lentils...for my first batch. Hopefully, I will do fine and be able to use the full amount next time.

This was so easy to make! I found cut up squash at Trader Joe's...so didn't even have to peel and cut the squash. Just cut the cubes smaller!

I think I do use all the oil; though I probably should cut it in half! I LOVE this soup! It's a staple for days when I have an orthodontist appointment and I can't chew anything. You get veggies and protein all in one dish! I also usually double the recipe and freeze half of it for another day.

I don't usually eat much with it, other than maybe a slice of bread with preserves. And lentils are about the safest bean you can eat, so they shouldn't cause you any trouble. I still take Beano with everything, though.

Onions? Not sure. Since I tend to have gas and bloat every day, I just take precautions and don't eat as many gassy potential foods as possible. Especially since this recipe already has lentils.

I don't add onion to anything because I'm so prone to gas and bloat. I cannot believe so many people can eat cooked oinion. I love the taste and really miss it.
