Flavouring tofu

I would like to introduce tofu into my diet but I don't like the taste. When I lived in the UK I bought some tofu cubes that were flavoured throughout. I have tried a number of ways to flavour tofu using a variety of marinades but nothing seems to penetrate into the core of the pieces.

What is the secret to getting flavour throughout tofu pieces?

Hi, Here is what I do .

Take a block of firm tofu - it comes in a plastic package with a bit of water in it.
Press it - put the rinsed tofu between two plates with something heavy on top - water will come out in about 25 minutes.
Take the tofu and cube in in small cubes. I saute it over med/high heat in very very little oil and spray some Braggs on it. Braggs is a very healthy soya sauce type flavouring. I add it to stir fried veggies and serve with rice.

You might see if you can find a copy of Estrogen: The Natural Way by Nina Shandler. I'm not comfortable with the author's insistence on consuming a large amount of plant estrogen every day, but she has lots and lots and lots of ways to prepare tofu. Ms. Shandler does not like tofu any more than you do (or I do for that matter), but says she has learned to think of it as an ingredient, like flour. It's what you do to, for, or with it that makes it palatable.

Ms. Shandler also says that tofu does not reflect the flavor of other food and spices as so many cookbooks claim it will. Rather tofu simply sucks up any flavoring added to it which means you have to use a *lot* of flavoring to get any to "stick".

If you want to flavor tofu with a marinade, she recommends Firm Tofu (Extra-Firm Tofu is too dense to absorb flavors from a marinade) marinated in ginger, sweet-and-sour, or soy-based sauces. She further says that in order to "really taste fully marinated, firm tofu needs to be soaked in sauce overnight or baked in marinade at 300 degrees F for more than an hour".

Thanks Sand. I wondered which firmness to buy. I am not too worried about consuming plant estrogen because even if I do find a way to introduce tofu into my diet I will be eating it sparingly

Ah ha - everything I have read says tofu reflects the flavour of other foods but I have never found that to be the case. It is good to know I am not alone. I will try using *lots* of flavour and see what happens.
