Why do cakes sink in the middle?

This is not strictly IBS related, but I figured there might be an expert baker or two who could help me out. My cakes always seem to sink in the middle. Any ideas why? I just baked two 9'' round cakes, and wouldnt you know it, they both sunk in the middle. It's not like I always use the same recipe either...

I know that if it's undercooked, it could sink in the middle during cooling, but that doesn't sound like what you're asking. Are you saying they sink while they are baking?
Do you live in high-altitude?
The only other thing I can think of is something to do with the flour - I know there can be a connection, buy my memory is failing me here....I'll post if I remember

Cakes tend to sink in the middle if the oven is not hot enough, the butter and sugar is not creamed enough, too much flour, batter is not mixed well enough, or there is too much baking powder in it.

Man, there's a lot of reasons why a cake sinks. It could be any number of them. I *think* this may be the reason. Quote:
5). Moving or jarring cake before sufficiently baked or opening the oven door before cake sets.
I was always under the impression everything should be rotated halfway through baking....now I know not to open the oven while baking a cake. If that doesnt work, then I'll try checking the temperature of the oven. I learned a lot of things from that site, thanks again!
