This is my favorite alternative to milk-based hot cocoa!

2-3 teaspoons cocoa powder
2 Tablespoons sugar
1 cup vanilla-flavored soy milk (I use Vita Soy lite)

1. Pour the soy milk into a microwaveable mug and microwave on high for 1 minute.
2. Add the cocoa powder and sugar and stir well to combine.
3. Note: If using plain soy or rice milk, you can add 1/4 teaspoon vanilla extract. I've also added almond extract with wonderful results!
4. The amounts can be tweaked depending on how chocolatey you like your cocoa!
5. Enjoy!

Try mixing the sugar and cocoa in the cup before adding the hot liquid.....or............a hand held emersion blender works good once it's made and you still can't get it smooth.

Kree,
My son just noticed your new picture and says that you look younger than in your other picture. Wish they could say the same about me!

Kandee has a good idea. I actually have started mixing together the cocoa and sugar and then adding the milk since posting this, because it does dissolve a lot better! I had some trouble with the same thing at first.

Lol, I don't know if that's a good thing or not! I know someday I'll be thankful that I look younger than my age, but at this point it would be nice to not be mistaken for a high school student (which I was once my senior year of college. sigh.)

This is my first post! I made this recipe this weekend for myself and the family and we all loved it! I used vanilla rice milk, since I had it and it was wonderful. What a great chocolate treat. Thank you.

Blue Diamond makes an almond chocolate milk that makes a great hot chocolate. I just heat it stove top and it's ready to go.

The Blue Diamond Almond Breeze Chocolate milk is the closest thing to dairy chocolate milk....I can't tell the difference!
