Pls Help! Need sugar-free dessert recipes, preferrably fruit

My BF & I are going over to his parents' this weekend for a birthday party. His mom asked me to make a "South Beach Diet-safe" dessert. She is making pasta w/kale & turkey sausage (b/c I can't have red meat-she's very supportive). So I was thinking a fruit dessert would go best w/that. And it's summer & VERY hot here in NC, so no one wants anything heavy or warm. She's ok w/stevia, since I can't have Splenda. Any suggestions?

I just found this on Food Network's website. It seems ibs safe except for the sparkling wine, but I can use an alternative for my serving. And I can make 2 different dishes, 1 with Splenda for the BF's mom, & 1 w/sugar for everyone else.

2 tablespoons sugar
4 cups assorted sliced fruit
1 pint raspberry or strawberry sorbet
1/2 bottle sparkling wine
Mint for garnish

In a large bowl, toss the sugar with the fruit.
To plate, place 1 scoop of sorbet in the middle of four shallow soup bowls. Spoon fruit around the sorbet. Pour champagne over the fruit. Garnish with a sprig of mint.

What do you guys think?

You could make a compotte of fruit and pour it over some angel food cake or other safe cake or bread. To make a compotte just combine a fruit (ex. blueberries or strawberries) and suger and water (or liqueur) in a pan and simmer until combined. It really is so simple and delicious.
I do really like what you are thinking of doing also!!!

That sounds good! And again I could just make 2 batches, 1 for the South Beachers & 1 for the rest of us! Thanks for the idea! I might do that instead-it's probably cheaper too!!
