My favorite thing to do with zucchini is to cut it into chunks, skewer it, and grill it. When it's tender, salt and pepper it, and if you like, toss a little soy parmesan on it. Mmmmmm.

I'm a pretty plain-jane type, too & genuinely love the fruit that we generally eat as a vegetable. I either grill it (I prefer to slice it length-wise) or bake it. I also love making ratatouille with it. It's fun cutting it in different ways with a mandolin.

It's fabulous in grilled vegetable salads or to bulk up a sauce, too.

Darlene, I make it with small amt of ex-virgin olive oil in small fry pan w/o garlic(right now bothering me), but prefer it with the garlic. Low heat salt pepper. American Heart Society cookbook has a recipe with small chuncks of potatoes, use extra virgin olive oil, low heat, throw in the zucchini (green and yellow) salt & pepper sprinkle grated cheese on top. You can use a chopped onion while cooking down potatoes. Zucchini takes faster to cook. Carol

I like them with sliced mushrooms quick stir fried in a little olive oil OR you can wrap them in foil together with a spray of flavored PAM (and I can handle onion but probably a smidge of onion powder or salt would do as well) and salt and pepper, which you can bake or throw on the grill.

I know this is really late but I just found your question. Pelvic floor dysfunction has to do with the bladder. You can email me for more information. (I don't think explaining it on the recipe board is a good idea) Thanks
