Nantuckett Cranberry Pie

This is one of my favorite holiday pies. I've never baked it with the egg whites and soy butter substitutions, but I'm going to try this Thanksgiving! I'm wondering if the cranberries will be ok on the tummy because they are cooked (but not mashed).
2 cups raw whole cranberries 1/2 cup sugar 1/2 cup chopped walnuts (I guess we can put the nuts in the food processor) 1 cup sugar 3/4 cup melted butter 1 cup flour 1 tsp. almond extract 2 eggs, beaten
Oven 375 degrees. Grease a 10" pie pan. (Is crisco ok?) Place cranberries, nuts and 1/2 cup sugar in the bottom of pie plate. Make a batter of 1 cup sugar, butter, flour, eggs and extract. Pour the batter over the cranberries. Bake 35-40 minutes. If using a clear pyrex pie dish, the oven can be lowered to 350 degrees.

This looks great! It will look (and surely taste) beautiful alongside a pumpkin pie. Very fesive colors.
As silly as this sounds, maybe making sure you chew well will aid the digestive process. The longer something is in your mouth, the more it is broken down by your teeth and saliva. And I am sure cooking them is better than raw. If anything, cranberries are good for urinary tract health.

This sounds so good! I love cranberries!
I think if you have this at the end of your safe meal you should be fine. The only thing that concerns me is the amount of 'butter', because you've also got fat from the walnuts. Do you think this is one you could sub some of it with applesauce? I didn't think so, but I'm not sure.
Also, you can just use non-stick spray for the 'greasing'.
