Honey & Soy Salmon

1 tablespoon wholegrain mustard 2 teaspoons clear honey 1 tablespoon soy sauce 1 teaspoon olive oil (I used olive oil spray instead) 4 boneless skinless salmon fillets each about 140g/5oz in weight (mine were called salmon darnes) 100ml/3.5 oz vegetable stock 1 bunch spring onions halved lengthways then cut into strips
Takes 20 mins, serves four
1. Mix together the mustard, honey and soy sauce in a small bowl. Spray the frying pan with cooking spray then add the salmon fillets and fry for 5 minutes turning halfway through, until almost cooked 2. Pour the soy mixture over the salmon and bring just to the boil. Add the stock and mix lightly with the pan juices 3. Sprinkle over the spring onion strips and let the liqud bubble for 1-2 minutes until the onions are heated through. Serve with boiled rice

..firstly its yummy secondly it's storecupboard ingredients thirdly its yummy fourthly it is really simple and fast to make and I am not a salmon fan but this is a really nice way to eat it. Delicious sauce, rich tasting but light.
Did I mention that it's yummy? I served it with Basmati Rice with Onion and Ginger and they worked AMAZINGLY together.
