Up here in Maine - well, it might be a New England thing, but whatever - we have these treats called Whoopie Pies. They're basically 2 cakey "cookies" sandwiched with overly sweet icing, and no self-respecting diner, gas station, or bake sale would be caught dead without them. The problem, of course, is that a full-size Pie weighs almost a pound, has roughly 900 calories and 54 grams of fat - and I'm not even exaggerating!

My dad found a recipe in the latest Prevention - lightened up and made a much more reasonable size, IBSers can safely enjoy them too. I'm a little "eh" about the marshmallow filling - look in the recipe index for Seven Minute Frosting, which would be a good substitute.

Prep time: 10 min
Cooking time: 5 min

1 cup all-purpose flour
1/4 cup unsweetened baking cocoa
1 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup IBS-safe margarine, softened
1 egg white
1/2 cup reduced fat soy milk
3/4 cup marshmallow creme (Fluff)

Preheat oven to 425.

In medium bowl, combine flour, cocoa, baking soda, and salt.

In large bowl, combine sugar, margarine, and egg white. With an electric mixer on medium speed, beat 2 minutes or until fluffy. Stir in flour mixture, then milk, until just blended.

Drop dough by rounded tablespoons onto large ungreased cookie sheets to make 32 cookies. Bake 5 minutes or until tops spring back when lightly touched.

Place baking sheets on racks to cool completely. Spoon about 2 teaspoons of the marshmallow on bottoms of 16 cookies. Top with remaining 16 cookies.

Makes 16. Per pie: 97 cal, 3g fat.

Casey,

I have seen these everywhere and thank goodness I have never tried one. I had no idea they had so many calories and grams of fat. Yikes! An IBS'ers nightmare.

Your version sounds really good. I'll have to give it a try.

these sound like they would be a real treat!!! I agree the icing filling sounds it might be better to cut down on the sweetness. Thanks for the receipe

You are pure evil you know that? Just kidding! One of my fond memeories of my childhood up where you live. My gandma made the best whoopie pies and I haven't even attempted them since I started this ibs diet. That is it, I'm going to have to make these wonderful things for the girls. Yeah ! Thank you ! And I am sure the frosting would be closer to the real thing too. Guess what I am going to make now? Hope Zoe lets me lol.

Haha... I AM pure evil... I figure, if I'm gonna be fat, I'm gonna take everyone else down with me! LOL

I thought of you as soon as I posted these, and hoped you'd see them, because I figured you knew all about the whoopie pies. The really weird thing is that I can eat a commercial whoopie pie - well, ok, 1/2 of one - and it doesn't trigger me, and I'm really sensitive to fats normally. But now that I have a safe recipe, I'm done tempting fate.

I still haven't made them because I was completely out of flour. I guess preggo brain got me because I thought I had more. I was planning on making them today but I made play dough for Zoe. I was thinking about making them tonight but my feet hurt so I think I'll be lazy.

I did go looking for my grandma's recipe and found it. The cakes took 1/2 cup of crisco and 2 egg yolks and the cream filling had 1/2 cup of crisco and 2 egg white that wasn't cooked. I always wanted to try and alter her recipe but never tried. I'll have to make these and suprise my mom sometime too. She loved them.

It's kind of a cream icing... I think most of the ones you buy up here now don't have eggs in the filling, but are a shortening-based "buttercream" type frosting. It's seriously almost an inch thick in some of them, and they taste like sugary fat.

I just replied to Shell down below, but I'll put it here too so you don't have to go looking for it. It's a shortening-based "buttercream" type frosting, VERY thick as you probably saw - almost like the filling in an Oreo cookie, but not as hard.

They look very good but honestly just hearing what is in the filling makes my stomach hurt.

Usually I see the chocolate cake with white filling. Today I saw apple cake and chocolate ship cookies with the white filling.

Have you had nothing but rain all week? We sure have here. Everything is very green and soggy. I'm ready for some sunshine.

The sun actually came out today for a little while and I just about fainted from shock, hehe. But this is spring in Maine! Hopefully we'll only have a few more weeks of this nonsense and then the weather will get better. Adam and I are going to Chicago next week - maybe we'll bring the sunshine back with us.

The best whoopie pie I've had was pumpkin with white filling. Of course, knowing now what's in them, I'll never eat such a thing again, but I don't see why you couldn't just take a safe pumpkin bread recipe, make it into "cookies", and fill it with a safe white icing, like the Seven Minute kind. I'm going to try that one of these days.

I went to bed last night around midnight and it was pouring, I woke up at 5am to the sounds of pouring rain.

Yum, the pumpkin sounds delicious. I love pumpkin bread and you could easily make cookies and use the 7 min. frosting. Maybe I should be doing some baking on these rainy days.

Bring that sun back with you Casey, we need it!

*giggle* These sound like Moonpies!! Except Moonpies are not quite as big and iirc are oatmeal cookies sandwiched with cream filling. I haven't eaten these kinds of treats since I was oh, err, like 12?? *lol*

She's out in California, and she thought they sounded like moonpies... but what *I* know as a moonpie is 2 cookies that are kind of like thick graham crackers, with cream or marshmallow in the middle, and the whole thing covered with chocolate. I haven't seen any of *those* since I lived in Maryland.

Now I want to know about regional sweets all around the US! So much for that diet! LOL!

You are right Casey. Moonpies are two cookies with marshmello in the middle and covered in chocolate. I have also seen them covered in white chocolate. This is definitly a southern delicacy.

I haven't eaten one of those since I was a kid, many years ago. I don't remember liking them that much but I know many people love moonpies.

I found them really, really dry... like you practically had to choke them down. Someone told me I was supposed to have that moonpie with a can of RC cola to wash it down, but that was too much sugar even for me.

I am on a NO SUGAR diet...atleast for the next 6 weeks after seeing the dietician last week...Im coping okay so far....think any remains of sugar in my system(and Im only talking REFINED SUGAR here) are out now so cravings are not as bad....but THEN....oh yes...I click on WHOOPIE PIES...intrigued as to what they might be....me thinking it may have some relation to a whoopie cushion ...but OH NO.....you evil people go and describe what sounds like my idea of heaven....GRRRRRRRRRRR!!!!
