Ice cream sandwhich dessert

Hubby is making this for me this weekend instead of a cake for my b-day. I am making the substituions from a dessert that someone brought in to work that I could not eat. I will let you know the results on MOnday. It probably could be a little high in fat and I know some can't tolerate Cool Whip so be careful!
2 packages of Toffuti chocolate ice cream sandwhiches 1 container of Lite Cool Whip Dairy free chocolate morsals ( I use Ghiradeli's)
Line the bottom of a pyrex with one box of sandwhiches. Spread Cool whip on top. Layer another level with the sandwhiches and then repeat with the Cool whip. Melt the choc. chips on the stove and then pour on tip of the Cool Whip. Freeze for at least 3-4hours. Cut and enjoy!
I can't wait to try this. You could probably add crushed peanuts to it as well if you could tolerate it!

I have a June birthday too & this sounds so perfect (and safe)! I'm always at a loss re: the cake thing (i really don't like it). I was thinking, actually, of something similar, just with almond flour cookies, tofutti or a frozen Hemp "non-dairy" frozen dessert.
I like it because it's something that somebody could make/do for me, for a change, on my birthday--that I'd actually be thrilled with.

She will be 13 this summer and somehow she is not like her mama in that she doesn't want a big huge party...I want to do something different so this might be it!
You know instead of going to the bother of melting the chocolate chips and stuff you could use the syrups they sell and even experiment with flavors and such...carmel...strawberry or even chocolate shavings!

This was fantastic!! The only thing I did different was to use Hershey's Syrup which I can tolerate instead of melting the choc. chips. I also added nuts to the top of it. Everyone in my family said how good it was and noone could believe it wasn't real ice cream. I highly recommend this!!
