Simply Delicious Baked Chicken & Rice
...just gave it a name!
2 c. minute rice 1 c. orange juice 1 c. water 1 envelope dry onion soup mix * see note below 1 can cr. of mushroom soup undiluted (use soy or rice sub) 1 1/2 lbs. chicken breast or pieces....unfortunately w/out skin. Leave a smitch on if you can!
Put rice, juice, water, cr. of mush. soup and most (or a good part) of the onion soup mix in 9 x 13 pan and mix together. Place chicken on top and spoon a little of the sauce mixture over the chicken, then sprinkle the chicken with the remaining onion soup.
Cover pan w/foil. Bake at 350 abt. 1 hr. till chicken is done. You can take off foil near the end so it browns some.
Changes I've made: Original Recipe called for chicken pieces so said bake 350 1 1/2- 2 hrs. I ALWAYS cut down on the dry onion soup. Use abt. 3/4 of it max.... as the whole pkg. of spice bothers me, BUT may not others. Really think it's tasty enough w/ the 3/4 of packet.
This is always a hit and a great dish to make for someone who is ill, or potluck supper. You can always put it together and give it to them to bake. I had have soooo many compliments on it. AND........it's just soooo easy and fast!
Notes: Original Recipe said put rice in pan, then a cutup chicken, cover w/mix of orange juice and water & cover w/ both soups, but I've ALWAYS made it this way.

PS If anyone can figure out how to get the zing in this w/less dry onion soup, I'd sure like to know. Maybe I could just sub some onion. Can't eat this right now
